cheesy potato~ beef casserole

By combining a couple favorites, my daughter and I came up with this. It is a kind of throw it all in one dish recipe, but we love it :)

Ingredients For cheesy potato~ beef casserole

  • 1 lb
    ground chuck
  • 1/2 c
    frozen chopped onions
  • 1 can
    cheddar cheese soup; undiluted
  • 14 1/2 oz
    can of creamed corn, undrained
  • 4-5
    potatoes, medium
  • 1 c
    cheddar cheese, shredded
  • 1 c
    crushed potato chips, or panko crumbs (optional)
  • garlic powder
  • seasoned salt, and pepper

How To Make cheesy potato~ beef casserole

    Preheat oven to 375. Brown the beef and onions; drain. Combine the undrained creamed corn and beef mixture; season to taste.

    Place the beef -corn mixture in a 13X9 inch baking pan. Peel and thinly slice potatoes. Combine the potatoes and cheddar soup; mix well. Place them on top of the beef layer; spread evenly.

    Put the crushed chips and cheese on top. Cover with tin- foil. Bake about 55 min to 1 hour, and then test the potatoes for doneness. If they are not tender keep cooking till a fork easily goes through.

    Uncover, add more cheese if you are like me; and cook for about 10 min more, till bubbly and golden. Let stand 10 min. before serving.
