My family loves these for breakfast. So tasty, yet simple. I make these for dinner as well.

Cassie's Italian home fries are ideal for anyone who wants a hearty and delicious side dish for breakfast or brunch. The potatoes are crispy on the outside, and the inside is tender. Sausage, along with garlic, peppers, onions, and mushrooms, adds a ton of flavor. Paprika and Italian seasoning are subtle. Fry or scramble eggs and serve these home fries for a comforting breakfast.

Ingredients For cassie's italian home fries

  • 4 md
    potatoes, sliced
  • 1/2 lb
    Italian sausage or your favorite breakfast sausage, I have used all different meats, today I used bulk sausage
  • 2 - 3 clove
    garlic, thinly sliced
  • 1/2 md
    green bell pepper, chopped
  • 1/2 md
    red bell pepper, chopped
  • 1/4 c
    chopped fresh mushrooms (optional)
  • 1 md
    onion, chopped
  • 1/2 - 1 tsp
    onion powder
  • 1/2 c
    shredded Italian 6 cheese blend or whatever cheese you prefer
  • 1/2 tsp
    paprika
  • pinch
    Italian seasoning
  • salt and pepper, to taste
  • oil to saute, I use olive oil

How To Make cassie's italian home fries

  • Saute the peppers, onions, garlic, and mushrooms.

    In a large skillet, saute the peppers, onions, garlic, and mushrooms in enough oil that they won't stick. When soft and starting to brown; remove and drain on a paper towel.
  • Brown sausage in a skillet.

    In the same skillet, crumble and brown the sausage until it's no longer pink. Drain on a paper towel.
  • Sliced potatoes and seasonings added to a skillet.

    Add more oil to the pan. Add sliced potatoes, salt, pepper, paprika, Italian seasoning, and onion powder. I sometimes leave the skin on the potatoes and par-cook in the microwave for about 5 minutes. They cook much faster that way. And the starch makes them brown nicely.
  • Adding sausage and veggies back to the pan while the potatoes cook.

    Continue cooking until potatoes are tender and getting brown. Add the crumbled sausage and veggies back to the skillet. Mix well.
  • Cover cooked potatoes with cheese.

    When potatoes are cooked, sprinkle evenly with cheese. Cover until the cheese is melted.
  • Serve Cassie's Italian Home Fries alongside eggs.

    Serve with eggs or leave the meat out and serve as a side with whatever meats for dinner. These are good any time of the day. I sometimes scramble eggs and pour them over the top of the potatoes and mix throughout. Then add the cheese and melt. Yum! Add some hot pepper flakes for a bit of a kick.
