Was trying to think of how I could make potato salad without my usual ingredients and this popped in my mind. First the onions and then the rest developed as I went... it turned out really delicious!

This creamy potato salad is unique in so many ways. The caramelized onions and peppers add a little something different to the salad. It's great for those who like onions in a potato salad but not their crunch. Mixing mayonnaise and sour cream are slightly sweet and tangy but at the same time has a mellow flavor. There's a hint of garlic that complements the caramelized onions and peppers. This salad doesn't have a ton of ingredients. You really taste the flavor of the potatoes. A delicious side dish for any cookout.

Ingredients For caramelized onion and pepper potato salad

  • 6
    potatoes (about 2 lbs)
  • 4 clove
    garlic, whole
  • 1 md
    onion, chopped
  • 1/2
    red bell pepper, chopped
  • 1/2
    green bell pepper, chopped
  • 1 Tbsp
    oil
  • 1 Tbsp
    water
  • 1/2 c
    sour cream
  • 1/2 c
    mayonnaise
  • salt, to taste
  • pepper, to taste
  • seasoned garlic, to taste

How To Make caramelized onion and pepper potato salad

  • Boiling potatoes and garlic cloves.

    Boil unpeeled potatoes and whole garlic cloves until potatoes are tender.
  • Rinsing and draining potatoes and garlic.

    Drain and run cold water over potatoes and garlic to cool. Drain potatoes and set garlic aside.
  • Potatoes chopped and seasoned.

    Peel and chop potatoes into half-inch chunks. Season with salt, pepper, and seasoned garlic powder.
  • Caramelizing onions and peppers.

    Spray non-stick pan and add a tablespoon of oil. Saute onions and peppers on low with a tablespoon of water, cover. Check and stir every few minutes. When softened, turn to high and caramelize (brown) the onions and peppers. Turn heat down to medium if needed.
  • Adding garlic to the onions and peppers.

    Add softened cooked garlic cloves by squeezing over onions and peppers. Smash and mix in.
  • Sour cream and mayonnaise added to the onions and peppers.

    Turn off heat and add sour cream and mayo to onions and peppers.
  • Onion and pepper sauce added to the potatoes.

    Mix all together and add to potatoes.
  • Potato salad ingredients mixed together.

    Turn into a large bowl and cover with a lid or plastic wrap and refrigerate for 2 or more hours. Tastes good warm too.
