My grandchildren love Campfire Potatoes with Grilled Shrimp Skewers. I love that everything is on the grill and the clean up is so easy. I usually serve Grilled Garlic Mushrooms and Grilled Vegetable Kabobs.

Ingredients For campfire potatoes

  • 6 lg
    potatoes, peeled and thinly sliced
  • 1 lg
    onion, thinly sliced
  • 1/2 c
    cheddar cheese, shredded
  • 2 Tbsp
    fresh parsley, chopped
  • 1 Tbsp
    worcestershire sauce
  • kosher salt and freshly ground black pepper
  • 1/3 c
    chicken broth
  • 6 slice
    bacon, cooked and crumbled (optional)

How To Make campfire potatoes

    Place the potatoes and onion on a large piece of heavy-duty foil (about 12"x 20"); dot with butter.

    Combine the cheese, parsley, Worcestershire sauce, salt and pepper; sprinkle over potatoes.

    Fold foil up around potatoes and add broth and bacon pieces if using. Seal the edges of foil well. Grill, covered, over medium heat for 35-40 minutes or until potatoes are tender.
