This is a great pot luck recipe. I remember my mom making it to take to church breakfast's on Sunday mornings. It was always fun to help make this. We have chickens and they lay so many eggs that we have this for dinner sometimes too. Another thing I like about this recipe is that you can kind of add anything you want to it. Including a layer of spinach if you want.

Ingredients For brunch casserole

  • 6 to 8
    potatoes, sliced
  • 8 to 10
    eggs
  • 1/2 c
    chopped green onions (optional)
  • 1/2 c
    chopped green peppers (optional)
  • 1/2 c
    chopped celery (optional)
  • 1/2 c
    mushrooms diced (optional)
  • 1 c
    shredded cheddar cheese
  • 1 pkg
    of jimmy dean sausage
  • 1 dash
    ms. dash seasoning table blend
  • 1/4 c
    cream or half and half

How To Make brunch casserole

  • 1
    Grease bottom of 13 X 9 Baking dish. Preheat oven to 350 degrees.

    Scramble eggs in a bowl with cream and set aside. Fry Potatoes and Set to the side to drain. Brown Sausage and other ingredients.

    In dish layer Potatoes, Sausage mixture, Cheese. Keep layering in this manner till all ingredients are used. Pour Scrambled eggs over mixture. Bake until center is set.
