Bacon Stuffed Potatoes

4 largebaking potatoes

·vegetable oil

1/2 cchopped shallots

2 Tbspbutter, melted

1 ccommercial sour cream
-
1/4 cfreshly grated parmesan cheese

1 tspsalt
-
1/2 tsppepper
-
8 slicecooked and crumbled bacon

·paprika
How to Make Bacon Stuffed Potatoes
- Wash potatoes and rub with oil. Bake at 400 degrees for 1 hour or until soft when pierced with fork. Allow potatoes to cool to the touch.
- Carefully scoop out pulp, leaving shells intact. Mash pulp; set aside.
- Saute shallots in butter until tender. Add shallots and remaining ingredients, except paprika to potato pulp; stir well. Stuff potato shells with pulp mixture; sprinkle with paprika.
- Place potatoes in a 9 inch square baking pan; bake at 350 for 15 minutes or until thoroughly heated. Yield 4 servings.
