Mother didn't make these quite as often as she made scalloped or mashed or fried, but she made them occasionally, usually with some kind of ham. And she always told the family joke about her Aunt Clara who, when asked to bring cheese potatoes to a family gathering, came in lugging a 5-lb. bag of potatoes and a block of cheddar cheese! "Oh, you wanted them COOKED?" she asked innocently. So this recipe is dedicated to both Mother and great-Aunt Clara. Photo: www.eldr.com

Ingredients For aunt clara's cheese potatoes

  • 10 or 12 lg
    white potatoes
  • 3 Tbsp
    butter
  • 3 Tbsp
    all purpose flour
  • 1 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 2 c
    milk
  • 2 c
    shredded cheddar cheese, extra sharp, divided

How To Make aunt clara's cheese potatoes

    Peel potatoes and slice into 1/8" slices. Place in greased Dutch oven.

    In a large saucepan, melt butter. Add flour and stir until blended. Add the salt and pepper. Pour in milk, little by little, stirring constantly with a wire whisk.

    Over medium-high heat, whisk constantly until mixture begins to thicken. When bubbles start to form, remove from heat and add 1-1/2 cups of the cheese. Pour over potatoes and mix thoroughly.

    Bake in a pre-heated 350-degree oven, covered, for 1 hour. Remove lid, sprinkle 1/2 cup remaining cheese over the top of potatoes, and continue baking, uncovered, for 30 minutes more.

    If you like, you may add buttered bread crumbs (about 3/4 cup) when you add the 1/2 cup of cheese.
