This is my grandmother's version of spaetzle. I would imagine she got the recipe from her mother, who left Germany when she was a teenager. It is different from those noodley little things you get in a restaurant. These are more like little dumplings.

Ingredients For spaetzle

    eggs
  • 1/2 c
    water
  • 1 1/2 c
    flour
  • 1/2 tsp
    salt
  • 1/4 tsp
    baking powder

How To Make spaetzle

    Lightly beat eggs. Add water. Mix dry ingredients together and combine with eggs and water.

    Drop small bits of dough from the end of a teaspoon into boiling salted water. Do not crowd. You may have to do a couple of batches. Once they rise to the surface (almost immediately), cook for an additional 1-2 minutes. Drain.

    This next step is optional. I melt butter in a skillet and pan fry until lightly browned on each side. If you prefer, you can serve them straight from the boiling water.
