These are easy and tasty. Everyone who has ever tried them has loved them. They keep for 1 year in the refrigerator so it's worth the effort.

Ingredients For refrigerator pickle

  • 16 c
    thinly sliced cucumber, washed but not peeled
  • 2 c
    thinly sliced sweet onion
  • 4 c
    sugar
  • 2 c
    apple cider vinegar
  • 1 tsp
    celery seed
  • 1 tsp
    turmeric
  • 1/2 tsp
    powdered alum

How To Make refrigerator pickle

    Mix cucumbers and onion and sprinkle 3 Tbsp. of salt all over, mix with hands, and let stand for 3 hours.

    WHILE YOU WAIT mix your vinegar solution of sugar, apple cider vinegar, celery seed, turmeric, and powdered alum. Stir occasionally to dissolve sugar.

    After 3 hours, drain cucumbers/onions and pour vinegar solution over them. This makes 1 gallon or 4 quarts. Store in refrigerator (doesn't have to be sealed as when canning).

    They are ready to eat in 24 hours and will keep for 1 year. Enjoy!
