guinness and cheddar cheese dip

I haven't made this for years and to be honest don't remember how I came up with it, but I do remember that it was really good. I love dips!!1

Ingredients For guinness and cheddar cheese dip

  • 8 oz
    cream cheese, room temp
  • 2 1/2 c
    sharp irish cheddar cheese, grated
  • 1 tsp
    dijon mustard
  • 2 Tbsp
    half and half
  • 1 pinch
    salt
  • 1/4 c
    guinness
  • 2
    scallions, chopped
  • 2 Tbsp
    fresh parsley, chopped (make a little extra for garnish)
  • 1 dash
    tobasco (or to taste)

How To Make guinness and cheddar cheese dip

    I use my blender on low, combine cream cheese, grated cheddar and half and half. Add salt, combine. Pour in the Guinness and blend until smooth. Add scallions.Pulse briefly. Add tobasco, to taste. Some like it hot!!!

    Chill for at least an hour. When you're ready to eat, bring it to room temperature, it might need a quick stir. Garnish with some chopped parsley and serve with crackers or bread sticks.
