Here's the recipe I was searching for. I'ts been years since I made it, but it's made exactly like the way Laura Ingalls described her mother doing it in the "Little House" books. It starts from scratch, and is made in a dutch oven. Can be made over a fire if your dutch oven has legs, and you watch it really close. This can also be done without the salt pork for a great vegetarian dish. Add a little Liquid Smoke for flavoring.

Ingredients For granny smith's old-fashioned baked beans

  • 1 lb
    dried great northern beans
  • 2 tsp
    salt (can be omitted)
  • 1 md
    onion
  • 1/4 lb
    lean salt pork
  • 1 1/2 c
    very hot water
  • 1/2 c
    molasses
  • 1/4 c
    chili sauce
  • 1 tsp
    prepared mustard
  • 2 tsp
    worcestershire sauce
  • 1
    bay leaf (optional)

How To Make granny smith's old-fashioned baked beans

    Sort and wash beans. Place in large pot, cover with water and let soak overnight.

    Pour off water and replace with fresh. Add salt to beans and bring to a boil. Cover, reduce heat and simmer 45 minutes or until the skin peels back when you blow on one of the beans. Drain.

    Slice onion into the bottom of a dutch oven. Pour drained beans over onion in dutch oven. Cut salt pork into 1/2 inch chunks and bury in the beans. Stir the molasses, chili sauce, mustard, and worcestershire sauce into the hot water and pour over beans. (Add bay leaf if using. Remove before serving.)

    Bake, uncovered, for 6 hours in a 300-degree oven. Do not let beans go dry. Add water as necessary.
