Ingredients For cajun skillet beans

  • 1 md
    onion, chopped
  • 3 clove
    garlic, minced
  • 2 Tbsp
    olive oil
  • 3 stalk
    celery, chopped (about 1 cup)
  • 2
    green or red bell peppers, chopped (1 1/2 cups)
  • 1 tsp
    fresh thyme (1/2 teas. dried)
  • 1 Tbsp
    fresh basil (1 teas. dried)
  • 1/4 tsp
    black pepper, or to taste
  • 1 pinch
    salt, or to taste
  • 1 pinch
    cayenne pepper, or to taste
  • 2 c
    chopped fresh tomato or 14 oz. canned tomato
  • 1 Tbsp
    honey or molasses
  • 1 Tbsp
    dijon mustard
  • 4 c
    cooked black-eyed peas or butter beans (20 ounce frozen or 2 16-oz cans, drained)
  • chopped green onion, garnish
  • grated cheddar cheese, garnish

How To Make cajun skillet beans

  • 1
    Heat oil in heavy skillet and sauté onions and garlic until starting to soften.

    Add peppers and celery and continue to sauté for about 5 minutes, stirring occasionally.

    Add herbs and seasonings. Cover and cook for 5 minutes or until onions are golden. Stir occasionally.

    Add tomatoes, honey or molasses, and mustard. Simmer for 5 more minutes.

    Add beans, cover and stir occasionally until heated through. (10 - 20 minutes, depending if you use canned or frozen beans.)

    Top with scallions and cheese, as desired. Serve.
