  • 1 medium
    onion, chopped
  • 3 clove
    garlic, minced
  • 2 Tbsp
    olive oil
  • 3 stalk(s)
    celery, chopped (about 1 cup)
  • 2
    green or red bell peppers, chopped (1 1/2 cups)
  • 1 tsp
    fresh thyme (1/2 teas. dried)
  • 1 Tbsp
    fresh basil (1 teas. dried)
  • 1/4 tsp
    black pepper, or to taste
  • 1 pinch
    salt, or to taste
  • 1 pinch
    cayenne pepper, or to taste
  • 2 c
    chopped fresh tomato or 14 oz. canned tomato
  • 1 Tbsp
    honey or molasses
  • 1 Tbsp
    dijon mustard
  • 4 c
    cooked black-eyed peas or butter beans (20 ounce frozen or 2 16-oz cans, drained)
  • ·
    chopped green onion, garnish
  • ·
    grated cheddar cheese, garnish

How to Make Cajun Skillet Beans


  1. Heat oil in heavy skillet and sauté onions and garlic until starting to soften.
  2. Add peppers and celery and continue to sauté for about 5 minutes, stirring occasionally.
  3. Add herbs and seasonings. Cover and cook for 5 minutes or until onions are golden. Stir occasionally.
  4. Add tomatoes, honey or molasses, and mustard. Simmer for 5 more minutes.
  5. Add beans, cover and stir occasionally until heated through. (10 - 20 minutes, depending if you use canned or frozen beans.)
  6. Top with scallions and cheese, as desired. Serve.
