Really an easy way to fix a fall side dish. Have it as a sweet side dish or serve it as a desert. You could just as easily use butternut squash, pie pumpkins or any squash you choose.

Ingredients For acorn squash with apples and walnuts

  • 1 md
    acorn squash
  • 1 md
    sweet apple (not granny smith)
  • 3/4 c
    walnuts
  • 3-4 tsp
    butter
  • 1/4 c
    brown sugar
  • cinnamon to taste

How To Make acorn squash with apples and walnuts

    Pre heat oven to 350 Wash, cut length wise and de-seed acorn squash, I use a small ice cream scoop to do this Place the following in a bowl as you prepare them Peel, core, and corse chop apple Ruff chop walnuts

    Add brown sugar ( if you are a diabetic you can use plain Splenda), cinnamon, and butter. Mix all well with your hands

    Add mixture to the hollowed out cavity of both half of the acorn squash Put filled acorn squash half a back together and wrap tightly in aluminum foil Place in shallow baking pan and bake at 350 for 45min to 1-hour, or until squash gives to lite pressure

    Remove from foil and using a spoon core out the inside, with the filling into a serving bowl, add more brown sugar if needed. ENJOY!!!
