I think the easiest way to use fresh lemons is to freeze them!! My brother and his wife insist this also kills cancer cells... whether it does that or not, grating the whole lemon lets nothing go to waste.

The majority of the vitamins are in the rind and seeds which we toss out. Why not start using the whole thing instead?

I used to avoid fresh lemons because if I wanted half of a lemon the other half would go bad waiting to be used, but now, they'll last for months and are still fresh next time. I use them more now that I've learned this easy method to keep them fresh.

How to Make Fresh Lemon Every Time!

Step-by-Step

  1. Wash the lemons. I just rinse mine in cold water, and cut off any odd or discolored places. My SIL told me about cutting both of the pointy ends off to make them easier to grate -- then place them in plastic bags and put them in the freezer over night.
  2. Then, when you need some fresh lemon, take one out of its bag in the freezer. I like to grate mine on the second largest holes in the 4-sided grater because it seems easier for me to do than the large ones.
  3. Here is what it looks like after it is grated.
  4. I find it easiest to pick up the gratings with a large sharp knife which I slide under the little pile and then transport to their destination.
    Sprinkle it in your water, or other beverages, vegetable salad, ice cream, soup, noodles,spaghetti sauce, rice, sushi, fish dishes. There are lots of places that lemon adds fresh taste.
  5. I then replace the lemon in its bag in the freezer for next time. Clean up is super easy -- all you have to do is rinse everything in warm water and you're done. Enjoy!
