My Mom loved having her family over for Christmas Eve, and would make all kinds of finger foods and treats. One of everybody's favorites was her Salmon Log. I never got her recipe before she passed away, but found this one online a few years ago, and its just like hers. There is nothing as comforting as a reminder of something our Moms could make, is there? =)

Ingredients

  • 16 oz
    can of salmon
  • 1 tsp
    lemon juice
  • 2 tsp
    onion grated
  • 1 tsp
    horseradish
  • 1/4 tsp
    salt
  • 1/4 tsp
    liquid smoke flavoring
  • 1/2 c
    chopped pecans
  • 3 Tbsp
    snipped parsley
  • 8 oz
    cream cheese

How to Make Salmon Log

Step-by-Step

  1. Mix all ingredients, except pecans and parsley a day ahead and refridgerate covered.
  2. Form into two logs and roll in pecans to coat log.Sprinkle with parsley and refridgerate until ready to serve. Serve with crackers of your choice.
