1/2 bunchfresh spinach
1/2 bunchfresh cilantro
3 clovegarlic, minced
1/3 cparmesan cheese, grated
1/3 colive oil
·salt and pepper to taste -- parmesan will add some salt so consider that when adding additional salt to pesto
How to Make Cilantro-Spinach Pesto
- Rinse spinach and cilantro and pat dry with paper towels. Remove stems from spinach and coarsely chop both.
- Combine spinach, cilantro, garlic, cheese and walnuts in a food processor; process until finely chopped.
- Add olive oil in a stream on high speed until smooth.
- Use this pesto on pasta or as a spread on bread or crackers.
