spice essential: everything but the bagel

If you happen to find yourself in a Trader Joe’s (we just got our first one in January), mosey on over to the spices. Then look through the bottles until you see one called Everything But The Bagel… It is very popular. It has all the good stuff that goes a bagel, but it has so many more uses. I knew what was in it, I just needed to figure out the proportions, and last night I think I got it. So, you ready… Let’s get into the kitchen.

Ingredients For spice essential: everything but the bagel

  • PLAN/PURCHASE
  • 2 Tbsp
    poppy seeds
  • 1 Tbsp
    regular, untoasted, sesame seeds
  • 1 Tbsp
    black sesame seeds
  • 1 Tbsp
    dehydrated onion, crushed, but not to a powder
  • 2 tsp
    dehydrated garlic, crushed, but not to a powder
  • 1 tsp
    salt, kosher variety, medium grind, or to taste
  • OPTIONAL ITEMS
  • 1 - 2 pinch
    red pepper flakes

    You will need a skillet to toast the seeds, and a container, like an old glass spice bottle to store the spice in. If properly stored (cool place, away from sunlight), it should last 6 – 8 months.

    To toast, or not to toast… that is the question Here my take on the subject. Toasting is optional; you can just combine all the spices together, stick them in a bottle, and Bob’s your uncle. With that said, toasting all those spices will bring out so much flavor; especially if the spices are not as fresh as they should be. I do have one exception to toasting. If you are sprinkling them anything that you intend to bake, then I would not toast. For example, you purchased some frozen bagels, and you are going to stick one in the oven and sprinkle some of this on the top before baking. In that scenario, I would not use toasted spices.

    Gather your ingredients (mise en place).

    Add all the ingredients to a skillet over medium-low heat and cook, while stirring until they are fragrant, and the regular sesame seeds begin to turn golden, about 3 – 4 minutes.

    The seeds will go from golden-to-burnt very quickly, so do not leave the skillet unattended

    Allow to completely cool and then store as you would any of your other spices.

    Use on a bagel, on toast with butter or cream cheese, spice up a bowl of soup, sprinkle over some steamed veggies. It will spice up a bowl of hummus or perk up some popcorn. Enjoy.
