I love creating my own spice mixes; not only does it give you control over the ingredients, and keeps out the chemicals and preservatives, in addition you can tweak it to fit your individual tastes.

Recipes for Old Bay include most of the same ingredients… It is the proportions that make each mix unique. This is my unique mix.

So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE

  • SPICES THAT REQUIRE GRINDING

  • 1 Tbsp
    dried bay leaves, finely ground
  • 1 Tbsp
    celery seeds, ground
  • 1/4 tsp
    red pepper flakes
  • THE REMAINDER OF THE SPICES

  • 1 1/2 tsp
    dry mustard, i prefer coleman’s
  • 1 tsp
    black pepper, freshly ground
  • 1 tsp
    white pepper, freshly ground
  • 1 tsp
    paprika, smoked variety
  • 1 tsp
    celery salt
  • 1/2 tsp
    ground ginger
  • 1/4 tsp
    nutmeg, freshly grated
  • 1/8 tsp
    ground cloves
  • 1/8 tsp
    ground allspice
  • 1/8 tsp
    cayenne pepper, or to taste

How to Make Homemade Essentials: Old Bay Seasoning Mix

Step-by-Step

  1. PREP/PREPARE
  2. Gather your ingredients (mise en place).
  3. Grind the top three spices, and then combine them with the others.
  4. Store in a glass jar in a cool dry place.
  5. PLATE/PRESENT
  6. Use in any recipe that calls for Old Bay seasoning. Enjoy.
  7. Keep the faith, and keep cooking.
