My son loves egg salad sandwiches and he especially likes when I make it this way. My mother shared this recipe with me, of which I tweaked. I hope you try it sometime.

  • 4
    hard boiled eggs - peeled and cut in half and yolks removed
  • 5 Tbsp
  • 1 c
    cottage cheese - i used small curd
  • squirt
    dijon mustard
  • 1 Tbsp
    minced sweet onion or more
  • 1 Tbsp
    dried dill
  • Kosher
    salt & pepper to taste
  • toasted

How to Make ~ Cottage Egg Salad ~


  1. Place yolks in a small bowl and mash. To the yolks add the mayonnaise & mix well together until smooth. Add the dill and mustard. Combine well.
  2. Chop the egg whites.

    In another bowl, mix the egg whites with the cottage cheese.

    Now mix the cottage cheese mixture with the yolk mixture. Blend well. Add salt and pepper to taste.
  3. Spread desired amount on toasted bread. Can add a lettuce leaf if desired.
