Ingredients For gazpacho salsa

  • 1 1/2 c
    tomato based vegetable juice
  • 1 lb
    tomatoes, seeded and diced
  • 1 can
    (15 ounce) garbanzo beans, rinsed and drained
  • 1 c
    corn,fresh or frozen
  • 1 md
    green pepper, diced
  • 1 sm
    cucumber, diced
  • 1/2 c
    prepared salsa
  • 1/2 c
    jalapeno peppers, seeded and diced
  • 1/4 c
    green onions, chopped
  • 1 Tbsp
    fresh lime juice
  • 2 clove
    garlic, minced
  • 1/2 tsp
    granulated sugar
  • 1/8 tsp
    black pepper
  • tortilla chips

How To Make gazpacho salsa

  • 1
    Combine all ingredients in a bowl. Cover and refrigerate for at least 1 hour. Serve with tortilla chips.

    Note: For a spicier salsa, substitute spicy vegetable juice for the mild vegetable juice.
