Ingredients For gazpacho salsa

1 1/2 ctomato based vegetable juice

1 lbtomatoes, seeded and diced

1 can(15 ounce) garbanzo beans, rinsed and drained

1 ccorn,fresh or frozen

1 mdgreen pepper, diced

1 smcucumber, diced

1/2 cprepared salsa

1/2 cjalapeno peppers, seeded and diced

1/4 cgreen onions, chopped

1 Tbspfresh lime juice

2 clovegarlic, minced
-
1/2 tspgranulated sugar

1/8 tspblack pepper

How To Make gazpacho salsa

1Combine all ingredients in a bowl. Cover and refrigerate for at least 1 hour. Serve with tortilla chips.

2Note: For a spicier salsa, substitute spicy vegetable juice for the mild vegetable juice.
