Basically this is a layered dip that you serve with round tortilla chips. This dip is very popular in Texas and is great for tailgating.

Ingredients

  • 2 large
    cans, bean dip or refried beans
  • 3 large
    ripe avocados
  • ·
    salt to taste
  • ·
    pepper to taste
  • 2 Tbsp
    fresh lemon juice
  • 1 ( 8 ) oz
    carton sour cream
  • 1/2 c
    hellmanns mayonaise
  • 1 pkg
    lowery's taco seasoning
  • 1 bunch
    green onions, chopped
  • 3 medium
    tomatoes, seeded and chopped
  • 1 small
    can black olives chopped
  • 3/4 lb
    mild cheddar cheese, grated
  • ·
    black olive slices to garnish

How to Make Mexican Buffet

Step-by-Step

  1. Spread beans in the bottom of a large platter.
  2. Mash avocados with salt, pepper and lemon juice. Spread over beans.
  3. Mix sour cream with mayonnaise and taco seasoning. Spread over avocado.
  4. Sprinkle onions, tomatoes, and chopped olives over sour cream mixture.
  5. Top with grated cheese and garnish with olive slices

    Serve with round tortilla chips or large Fritos.
