robyn's huevos verde

My mom was telling me about an egg dish that she saw Dr. Phil talking about on tv, and while it sounds good to me, she wasn't a fan of the soy sauce; so I got to thinking about what would be good, and what I had on hand, and ended up here. While I'm sure this has been done before, this is my take on it. *Btw, for those who are curious, Dr. Phil's egg 'thingy' as he calls it, is to warm a tortilla until softened, fry some eggs until they are hard-cooked and wrap them in the tortilla, adding soy sauce liberally on top of the eggs first.

Ingredients For robyn's huevos verde

  • 4
    eggs
  • 4
    flour tortillas
  • 1 c
    cheddar cheese, shredded
  • 7 oz
    salsa verde (green salsa, i used herdez brand that comes in a little can)
  • 4
    green onions
  • 2 Tbsp
    olive oil

How To Make robyn's huevos verde

    Heat approx. 1 tbsp of oil in skillet and cook the tortillas, two at a time, until they start to puff and get lightly browned around the edges. Remove to a plate.

    Fry two eggs until they are cooked to your liking (I prefer them over medium for this dish.) You may need to add a bit more oil first.

    While your eggs are cooking, sprinkle 1/2 the grated cheese over the tortillas, about 1/2 a cup. Microwave the tortillas just long enough to melt the cheese a little, about 35 secs or so. Time will vary depending on your microwave.

    Pour several tbsp of the salsa verde over top of the cheese. Once the eggs are done, add one egg to top of each of your tortillas. Then sprinkle the top with some fresh, cut up green onions. Repeat the above steps with the remaining two eggs and tortillas. I like to serve mine with fresh, sliced red tomatoes on the side, or maybe a guacamole salad. A side of fried potatoes is also good. *This will serve two people (2 eggs/tortillas each) or 4 people if each are eating only one egg/tortilla.
