I needed to use up a couple of very ripe peaches today and this is what I came up with. I served it with seared chicken breasts.

Fruit salsa is wonderful on chicken, fish, or all alone on a tortilla chip. This is a wonderful way to use ripe and juicy peaches. It's sweet with a slight bite from the green onions. Ingredients

  • 2 medium
    fresh ripe peaches
  • 1/2 medium
    fresh green pepper
  • 1/4 c
    chopped spring onions with green tops
  • 1/4 c
    fresh cilantro, chopped
  • 1 tsp
    honey
  • 1/2
    lemon, juiced & zest
  • ·
    salt & pepper, to taste

How to Make Peach Salsa

We used 3 peaches because ours were on the small side.

Step-by-Step

  1. Remove skin from peaches by peeling or placing peaches in boiling water for 2 minutes and then plunging into ice water.
  2. Dice peaches and place them in a bowl. Dice green pepper and chop onions and cilantro. Add to peaches.
  3. Add honey, lemon juice, zest, salt, and pepper.
  4. Stir well. Let sit at room temperature for 1/2 hour for flavors to marry.
