Mango Pineapple Salsa

When it comes to salsa I just can't get enough variety. I want to try every recipe I come across! When I saw this recipe had pineapple in it, I was intrigued. And rightfully so! The mango and pineapple add a delicious citrus-y sweetness to the spicy jalapenos. It was perfect served alongside a fillet of baked orange roughy.

1 cpineapple, fresh diced

1 cmango, fresh diced

1 smallonion, chopped fine

1jalapeno pepper, seeded & finely chopped

1/4 ccilantro, fresh chopped

1/4 cflat leaf parsley, fresh chopped

2limes, juiced
-
2zest of lime
-
1/4 colive oil, extra virgin
How to Make Mango Pineapple Salsa
- Place first 6 ingredients in bowl.
- Add the juice from the limes, lime zest, and mix thoroughly.
- Stir in the EVOO until thoroughly mixed.
