Ingredients

  • 1 c
    fresh corn kernels, cooked
  • 1
    ripe papaya, peeled, seeded and cut into 1/4" pieces
  • 1/3 c
    red onion, finely chopped
  • 2
    ripe plum tomatoes, seeded, finely diced
  • 1.5 tsp
    garlic, finely minced
  • 1 Tbsp
    freshly grated lime zest
  • 1/4 c
    fresh lime juice
  • 1/3 c
    chopped fresh cilantro

How to Make Festival Corn Salsa

Step-by-Step

  1. In a large bowl, combine all ingredients except cilantro.
  2. Toss together.
  3. Refrigerate, covered, for up to 2 hours.
  4. Just before serving, toss with cilantro.
