This is a big hit for parties and a nice change from tomato salsa. I got this recipe from a coworker years ago.

Blue Ribbon Recipe

The name of this recipe is perfect because it tastes like salsa with corn. This salsa is creamy and sweet with a little tang and spice. It's a nice change from traditional salsa and can be served in an assortment of ways. Serve with chips as a dip or on top of nachos, burrito bowls, or tacos.

Ingredients For corn salsa

  • 2 can
    Mexican blend corn (11 oz)
  • 2 c
    sharp cheddar cheese, shredded
  • 1 c
    mayonnaise
  • 1 c
    sour cream
  • 1/2 c
    pickled jalapeno
  • 4 oz
    diced pimentos
  • 1 Tbsp
    garlic powder
  • 1 tsp
    Adobo (optional)

How To Make corn salsa

  • Mix sour cream and mayonnaise.
