Ravigote is a classic french dressing mostly served with boiled or poached fish, especially good over salmon, cheese, etc etc.

Ingredients

1/4 c
snipped green onions
2 Tbsp
butter, divided
3 Tbsp
dry white wine
1 Tbsp
vinegar
1 Tbsp
all purpose flour
1 c
light cream
1/4 tsp
salt
1/4 tsp
dried tarragon, crushed

How to Make Ravigote Sauce

Step-by-Step

  • 1Cook green onions in 1 tablespoon butter till tender.
    Add wine and vinegar.
    Simmer, reducing liquid by half.
  • 2Melt 1 tablespoon butter, blend in flour.
    Add light cream.
    Cook and stir till mixture bubbles.
    Remove from heat, stir in salt, and tarragon.
  • 3Return to low heat; gradually stir in onion mixture.
    DO NOT BOIL.
