Ingredients For maple brine

  • 4 qt
    water
  • 1 c
    each: maple syrup and soy sauce
  • 2 c
    dark brown sugar
  • 6
    whole bay leaves
  • 8 clove
    garlic cut in half
  • 2 tsp
    whole peppercorns
  • 3/4 c
    sea salt
  • 3 lg
    sprigs thyme or lemon thyme (2-3 tsp dried)

How To Make maple brine

  • 1
    Place all ingredients in a large pot and bring to a boil, dissolving sugar and maple syrup. Remove from heat and allow brine to cool completely before using.

    To use put in a plastic or glass container that is large enough to hold liquid and meat. (Pail) Put in fridge 2-3 days turning often. Keep covered holding meat under the brine.
