Poultry can be a bit on the bland side… but not with these awesome marinades on your side. These are my go-to marinades when I’m looking to spice up some chicken. Use them on breasts, thighs, legs… whatever your pleasure…. Bone in, bone out, skin on, skin off… it doesn’t matter. Choose your marinade, and have some fun. So, you ready… Let’s get into the kitchen.

Ingredients For marinade essentials: magic with poultry

  • GIVE IT TO ME STRAIGHT
  • 1/4 c
    kosher salt
  • 1 qt
    filtered water
  • KICKING HOT/HONEY
  • 3 Tbsp
    olive oil, extra virgin variety
  • 1/4 tsp
    salt, kosher variety
  • 1/2 tsp
    white pepper, freshly ground
  • 2 clove
    garlic, minced
  • 4 Tbsp
    fresh clover honey
  • 2 Tbsp
    chopped chipotles and adobe sauce (canned)

  • 4 Tbsp
    olive oil, extra virgin variety
  • 2 Tbsp
    lemon juice, freshly squeezed
  • 1 pinch
    salt, kosher variety
  • 1/4 tsp
    black pepper, freshly ground
  • 3 clove
    garlic, minced
  • 1 tsp
    dried oregano
  • 1 tsp
    dried marjoram
  • 1 tsp
    dried thyme
  • 1/2 tsp
    dried basil
  • 1/2 tsp
    dried rosemary
  • 1/2 tsp
    dried sage

  • 3 Tbsp
    olive oil, extra virgin variety
  • 1/4 tsp
    salt, kosher variety
  • 1/4 tsp
    black pepper, freshly ground
  • 2 Tbsp
    lime juice, freshly squeezed
  • 1 Tbsp
    chili powder, mild or hot, your choice
  • 1/2 tsp
    ground cumin
  • 4 Tbsp
    fresh cilantro, chopped
  • A HINT OF THE EAST
  • 4 Tbsp
    olive oil, extra virgin
  • 1/8 tsp
    salt, kosher variety
  • 1/4 tsp
    white pepper, freshly ground
  • 2 clove
    garlic, minced
  • 1/4 c
    coconut sugar
  • 1/4 c
    tamari sauce

How To Make marinade essentials: magic with poultry

  • 1
    The one exception to a marinade is the first one... that technically is a brine. Brining chicken can make it really juicy, and works in many recipes.
  • 2
    For the marinades, mix all the ingredients together and place into a bowl or Ziplock bag, add the chicken and refrigerate for a few hours or overnight. The exception to this is the brine... chicken should only be brined for 2 or 3 hours.
