We love grilling fresh veggies or portabella mushrooms in the Spring and Summertime. This marinade takes them to the next level. It's quick and easy and gives you and excuse to have an herb garden or pots. Nothing tastes better than fresh veggies with fresh herbs. So clean, so light and so easy.

  • 1/2 c
    olive oil
  • 2 Tbsp
    fresh garlic, chopped
  • 2 Tbsp
    red wine vinegar
  • 1 tsp
    fresh oregano
  • 1 tsp
    fresh thyme
  • 1 sprig(s)
    fresh rosemary
  • ·
    salt and pepper to taste

How to Make Fresh Herb Vegetable Marinade-Annette's

Step-by-Step

  1. whisk ingredients together and toss with raw vegetables.
  2. Marinate for at least 2 hours and up to overnight. Grill until veggies are crisp tender or however your prefer. Enjoy!
