This may be my favorite thing to make (and eat), but it's not friendly to the waistline. It's delicious on scones and muffins. I use it to fill tarts, pour it warm over pound cake, and even as a cake filling. It's versatile and makes a great addition to any welcome or condolence basket. I hope you love it as much as we do.

Lemon curd sounds fancy, but this recipe proves it's easy to make at home. It's made with the simplest of ingredients and cooked in the microwave. Tart and silky smooth, the curd has a deep lemon flavor. It will be tasty on crepes, biscuits, pancakes, ice cream, pound cake, etc. You can even use it as a pie or tart filling.

Ingredients For easy peasy lemon curd

  • 1 c
    good-quality unsalted butter
  • 2 c
    granulated sugar
  • 6 lg
    eggs, beaten
  • 6 lg
    cold lemons, zested and juiced
  • 2 c
    lemon juice, fresh

How To Make easy peasy lemon curd

  • Melt butter in the microwave.

    In a microwave-safe bowl, melt the butter in the microwave on high.
  • Whisk sugar, eggs, lemon zest, and lemon juice.

    In a separate bowl, combine granulated sugar, eggs, zest of 6 lemons, and 2 c of fresh lemon juice.
  • Whisk melted butter into the egg mixture.

    Slowly whisk the hot melted butter into the eggs until combined.
  • Microwave at 1-minute intervals stirring after each minute.

    Cook in the microwave for one-minute intervals. Stir after each minute. Do not let the lemon curd boil or it will curdle.
  • Repeat until the mixture coats a spoon.

    Repeat until the mixture is thick enough to coat the back of a metal spoon.
  • Strain the curd.

    Strain the curd through a fine-mesh sieve to remove any egg bits to ensure a perfectly smooth curd.
  • Plastic wrap placed over the curd to chill.

    To prevent skin from forming, cover the curd with a layer of plastic wrap directly on the surface of the curd.

    The lemon curd will continue to thicken as it cools. Do not store it in a metal bowl. It will react with the acid in the lemons, discolor the curd, and give it a metallic flavor.
