Thousand and One Island Dressing

We decided we had to have some Reuben sandwiches,so I set out on a quest to create a thousand island dressing worthy of such a meat. I came up with what we loved.And I'll throw in the sandwich recipe for free! Hope you give it a try. If you like this recipe, see others at my website:

  • 1 c
  • 1/4 c
    very finely minced red sweet pepper
  • 2 Tbsp
    very finely minced shallot
  • 1 Tbsp
    heaping, sweet pickle relish
  • 1 Tbsp
    heaping, finely chopped pimento olives
  • 1 Tbsp
  • 1 Tbsp
    chili sauce
  • 1 Tbsp
    fresh parsley, finely minced

How to Make Thousand and One Island Dressing


  1. Place all together in a bowl and mix well. (Note: I placed the pickle relish in a small sieve and pressed out some of the liquid). Place in fridge for a couple of hours to let the flavors meld.
  2. For a wonderful Reuben: For each sandwich: two slices Jewish rye bread. Butter once side of each and place under broiler until melted and lightly browned. Then on the untoasted side of one,slather with a TBSP or more of the 1000 Island dressing. Place about 1/3 of a pound of deli-quality corned beef on top.
  3. Take sauerkraut which has been placed in a sieve and drained and place on top, about 1/2 c on each top of the corned beef. Cover this with finely sliced good quality swiss cheese (I used Ementhaler). Place on a broiler pan. Turn off the oven from the broiling. Place the sandwiches in the oven to let the cheese melt and the meat to warm a bit. Slather the other slice of bread with more 1000 Island dressings and place on top, slice in half and enjoy.
