Marinated Zucchini Salad

This is a great recipe I created many years ago to use up all of that extra zucchini and tomatoes from my garden. It's quick, easy and tasty!!

    small zucchini, sliced
  • 1
    medium sweet onion, halved and sliced
  • 1
    large tomato, peeled and roughly chopped
  • 1/4 c
    fresh basil, chopped
  • 8 oz
    bottled italian dressing
  • ·
    salt and pepper
  • 1 Tbsp
    freshly grated parmesan cheese

How to Make Marinated Zucchini Salad


  1. Mix all ingredients (except Parmesan) in a large bowl.
  2. Transfer to storage container, cover and refrigerate for at least 3 hours.
  3. Before serving, sprinkle Parmesan over top.
