betty's easy vietnamese dipping sauce/dressing

So easy. Found this in a magazine years ago, tweaked it for our liking. Serve with grilled fish, chicken, over a bowl of vermicelli noodles to make a salad, to dip Vietnamese rolls in or what ever takes your fancy. No chilling time required, just make and use. Keeps for 1 week in the fridge. Optional ingredients are great, but not necessary.

Ingredients For betty's easy vietnamese dipping sauce/dressing

1/3 cup lime juice (fresh is best, but bottled is fine too)

1/3 cup fish sauce

1/3 cup sweet chili sauce

1 teaspoon brown sugar

1 tablespoon chopped roasted peanuts **optional

1 tablespoon chopped cilantro (coriander) leaves **optional

1 tablespoon chopped vietnamese mint **optional

2 small "birds eye" hot chillies, desedded and finely chopped **optional - only use if you like heat!!

1Mix everything together in a NON metallic bowl using a fork or a whisk. Stir until the brown sugar is dissolved (about 30 seconds).
