Full of fresh ingredients, vibrant colors and awesome flavors, this Texas Caviar is a crowd pleaser! This dip is a natural with tortilla chips but it can be used as a side dish or as a topping.

Ingredients For texas caviar

  • DIP
  • 1 1/2 c
    orange peppers, seeded, membranes removed and finely chopped
  • 1 1/2 c
    red peppers, seeded, membranes removed and finely chopped
  • 3/4 c
    poblano peppers, seeded, membranes removed and finely chopped
  • 1/4 c
    jalapeño peppers, seeded, membranes removed and finely chopped
  • 1/2 c
    red onions, finely chopped
  • 3/4 c
    roma tomatoes, seeded and finely chopped
  • 1 can
    (15 oz) black-eyed peas, rinsed and drained
  • 1 can
    (15 oz.) black beans, rinsed and drained
  • 1 can
    (15 oz.) corn kernels, drained
  • 1 can
    (4 oz.) diced green chiles
  • 2 Tbsp
    fresh cilantro, finely chopped
  • LIME DRESSING
  • 1/4 c
    grapeseed oil
  • 1/4 c
    freshly squeezed lime juice
  • 3 lg
    cloves garlic, pressed
  • 1 Tbsp
    agave nectar
  • 1/2 tsp
    chipotle chili powder
  • 1/2 tsp
    ground cumin
  • freshly ground black pepper, to taste (i always use mixed peppercorns)
  • ground himalayan sea salt, to taste

How To Make texas caviar

  • 1
    In a large bowl, combine all the ingredients except cilantro. In a small bowl, combine all the lime dressing ingredients; whisk until well blended. Pour dressing over pepper mixture, stir, cover and transfer to the fridge for at least 6 hours and up to 8 hours.

    Before serving, sprinkle fresh chopped cilantro and serve it with tortilla chips or use it as a side dish or as a topping. 12 servings
