Gotta love a hot summer day when you don't want to cook but just want to eat something light. This is it! It is a flavorful mix with fresh from the garden veggies & herbs...so refreshing and perfect for a summer afternoon out chillin' by the pool or relaxing in the shade paired up with some delicious mango iced tea!!!

Ingredients For summer chillin' chickpea salad

  • 2 bunch
    parsley,chopped
  • 1 bunch
    cilantro, fresh, chopped
  • 1/2 sm
    onion
  • 2 can
    chick peas, drained & rinsed
  • 1 can
    cannelini beans, drained & rinsed
  • 12 - 15 sm
    chery tomatoes, sliced or diced
  • 2 - 3 sm
    garlic cloves, minced
  • a pinch
    or two of pepper
  • a pinch
    or two of salt
  • a pinch
    or two of beau monde
  • dash
    olive oil, extra virgin, several
  • dash
    lime juice, several to your taste
  • 8 - 12 oz
    gruyere cheese, shredded or parmesan
  • 4 Tbsp
    muffuletta olive mix
  • 1 bag
    pita chips, tortilla chips or bread for dipping

How To Make summer chillin' chickpea salad

    Rinse and drain your beans then set aside.

    Chop up your herbs, dice your onions, slice your fresh tomatoes, mince your garlic. Add all to a bowl and toss gently. Add your olive oil to your liking, then the lime juice. Add your olive mix and gruyere and toss some more. Add a little salt, pepper, beau monde and taste again to see how you like it. Adjust to your taste.

    Pour into a serving bowl, add your pita chips, tortilla chips or bread that you are serving it with to the side and your ready to eat.
