The first time I tried this, I didn't know what Satay was. When I tasted it I knew immediately - OH, this is Peanut Dipping Sauce! I like to grill or broil chicken tenders & use this for the dipping...it is great, I usually serve a ranch dressing alongside to have a variety of dips for the chicken.

I have eaten at many Thai restaurants and have tried some satays that weren't that great but I have to say that this one was really delish! I loved all the great flavors that shined through on this dish. I felt that it had the perfect amount of spice but you can adjust the heat to your liking.

This dipping sauce is great with grilled chicken or beef. I used chicken breast and rubbed them with olive oil and sprinkled on Essence of Emril seasoning. Ingredients

  • 1 Tbsp
    olive oil
  • 1 Tbsp
    dark sesame oil
  • 2/3 c
    small-diced red onion
  • 1 1/2 tsp
    minced garlic
  • 1 1/2 tsp
    minced fresh ginger
  • 1/4 tsp
    crushed red pepper flakes
  • 2 Tbsp
    red wine vinegar (or balsamic vinegar)
  • 1/4 c
    light brown sugar - packed
  • 2 Tbsp
    soy sauce
  • 1/2 c
    creamy peanut butter
  • 1/4 c
    ketchup
  • 2 Tbsp
    dry sherry (optional)
  • 1 1/2 tsp
    fresh lime juice

How to Make Satay (Peanut Dipping Sauce)

Step-by-Step

  1. Cook the olive oil, sesame oil, red onion, garlic, ginger and red pepper flakes in a small heavy pot on medium heat until the onion is transparent - maybe 10 - 15 minutes.
  2. Whisk in the vinegar, sugar, soy sauce, peanut butter, ketchup, sherry, and lime juice while cooking a minute more. Cool
  3. Serve with cooked skewered chicken, or meat of your choice.
