  • 3 c
    frozen corn thawed
  • 2 Tbsp
    olive oil
  • 2 small
    jalapeno seeded and diced
  • 3 clove
    garlic minced
  • 2 small
    shallots minced
  • 2 c
    shredded monterey jack cheese
  • ·
    cilantro for garnish

How to Make Corn Queso


  1. Place half the corn in a food processor and add 1/2 cup of water. Puree until smooth or as smooth as you can get it. Strain through a fine mesh strainer discarding the solids. Set aside
  2. Add the oil to a large skillet. Saute the garlic, jalapenos, shallots and remaining corn for about 5 minutes. Add the strained puree. Stir in the cheese and cook until melted and bubbly. Garnish with cilantro
  3. Serve with tortilla chips
