Blue Ribbon Recipe

This Mediterranean salad is full of summer goodness. Cucumbers and tomatoes are classic summer salad ingredients, but this takes that salad to another level. Herbs and Feta cheese give this dish a Mediterranean flair. What brings all the flavors together is the tangy dressing. This will be the perfect side dish for all your summer meals. Just note, that the dressing is very tangy thanks to the red wine vinegar. If you don't like vinegar, this may not be for you.

Ingredients For mediterranean salad

  • 1
    cucumber, diced and seeded if the seeds are large
  • 15
    grape tomatoes, quartered
  • 4
    scallions, sliced white and light green parts
  • 2 oz
    Feta cheese
  • 1/2 c
    chopped Kalamata olives
  • 1/2 c
    chopped red pepper
  • GREEK VINAIGRETTE DRESSING
  • 1/4 c
    red wine vinegar
  • 1/2 c
    olive oil
  • 1 Tbsp
    McCormick Greek seasoning
  • garlic cloves, crushed
  • fresh ground pepper and salt to taste
  • 1 Tbsp
    Grey Poupon Dijon mustard

How To Make mediterranean salad

  • Salad ingredients combined in a bowl.

    Chop all ingredients and combine with the Feta cheese.
  • Dressing ingredients whisked in a bowl.

    Mix all salad dressing ingredients and allow to sit for at least an hour prior to pouring on the salad. This will soften the dried herbs and allow to flavor to marry.
  • Tossing dressing and salad in a bowl.

    After an hour, pour dressing over the salad. Enjoy!
