This delicious salad is great on a bun, or on a bed of fresh spinach or greens...the addition of sweet peas and corn added great flavor and texture..this was our lunch...hubby had his on hot dog buns and couldn't get enough...he ate three...Delicious!!! Enjoy!

Ingredients For cassies crab salad

  • 1 - 8 oz
    imitation crabmeat - chunked
  • 2
    hard boiled eggs, chopped
  • 1/2 c
    frozen peas, thawed and drained
  • 1/2 c
    frozen sweet corn, thawed and drained
  • 1 - 2
    green onion, sliced - tops too
  • 1 stalk
    celery
  • 1/2 c
    shredded cheese - your choice, i didn's use this time, but is a good addition
  • DRESSING
  • little
    over 1/3 cup mayonnaise
  • 1/4 c
    sour cream
  • 1/2 tsp
    salt or to taste
  • 1/2 tsp
    pepper
  • 1/2 tsp
    dried dill
  • 1 tsp
    lemon juice
  • 1 1/2 - 2 tsp
    sugar

How To Make cassies crab salad

  • 1
    Mix all dressing ingredients in a small bowl, taste and season more if needed.

    Toss all salad ingredients in a medium sized bowl; spoon on dressing and toss to coat evenly.

    Serve on a bed of spinach or can be used for sandwiches, either way it's delicious! Enjoy!
