This potato salad has a very distinct flavour. It's a bit tart and a little spicy. It went well with my Lemon White Fish. I added some Vegenaise to mine and it was really good.

Ingredients For spicy potato salad

  • 6 lg
    yukon gold potatoes, cleaned
  • 3 lg
    kosher dill pickles
  • 1 c
    chopped celery
  • 1/2 md
    onion chopped
  • 2 clove
    garlic, crushed
  • 1 jar
    olives
  • 4 Tbsp
    light oil
  • 4 Tbsp
    apple cider vinegar
  • 2 Tbsp
    mustard, dijon or yellow
  • 2 clove
    garlic, minced
  • 2 tsp
    dill, dried
  • 1 1/2 tsp
    sea salt
  • 1 tsp
    black pepper

How To Make spicy potato salad

    Clean the potatoes and cut into large chunks. Boil until tender, but not soft. Drain and rinse in cold water.

    Drain again and chill in the fridge.

    Dice the pickles, celery and onion, chop the olives and put in a large bowl.
  • 4
    Add the vegetable mixture the oil, vinegar, mustard, garlic, dill, salt and pepper and mix well.

    Cube the chilled potatoes. Carefully fold the other ingredients in with the potatoes.

    Chill 1 hour and serve.
