Knorr used to make a marinade mix for non-mayonnaise type potato salad. It was available at German and European delis all over the US and Australia, as far as I know. It recently became unavailable, so I've been experimenting to make my own KARTOFFELSALAT MIT KLARER KRÄUTERMARINADE! It reminds me of the potato salad my German Oma made when I was a kid! (Prep time includes cooking the potatoes. Substitute wine vinegar for herbal vinegar if necessary)

Ingredients For potato salad with clear herbal marinade

  • 1 lb
    red potatoes, small
  • 1/2 c
    water
  • 1 tsp
    chicken or vegetable bouillon granules
  • 1 Tbsp
    minced mixed herbs (parsley, thyme and chives)
  • 3-4 Tbsp
    herbal vinegar (kuhne salata seasoned vinegar)
  • 3 Tbsp
    olive oil
  • 1 pinch
    salt and pepper, or to taste
  • 1 tsp
    mustard (e.g. düsseldorf style)
  • 1 pinch
    sugar
  • 1/2 c
    onion, minced

How To Make potato salad with clear herbal marinade

    Wash potatoes and boil until barely tender. Cool. Peel and slice. Put into bowl.

    Measure all other ingredients into a pot and heat together briefly. Pour warm mixture over potatoes.

    Stir and let potatoes steep for about an hour, stirring occasionally. Serve at room temperature.
