Potato Salad is something I very rarely eat because I don't like the way it is made. It is always loaded with mayonnaise and it has mustard in it. I have never bought it in the store because it is always sweet. So when I make it I want it to taste good and I want to taste all the flavors of the ingredients. So here is my recipe for potato salad, it is very simple and very good. This recipe is for One Person you can always make it larger. Enjoy!

Ingredients For potato salad rhonda's

  • 1
    large potato
  • 3-4 Tbsp
    mayo any kind *tip it is more flavorful to use as less mayo as possible*
  • 1/8 c
    minced onion
  • 7
    black olives minced
  • 1/2 stalk
    minced celery
  • dash
    salt (to taste)
  • black pepper (to taste)
  • dill weed (to taste) (optional) but it makes it delicious

How To Make potato salad rhonda's

    Boil Potato on the Stove on medium heat until you can pierce with fork and it is done. Set aside and let it cool down until warm. Then cut into small bite size cubes.

    Mince Olives, Onion, & Celery and combine in a bowl with the warm potatoes.

    Add dashes of Salt, Black Pepper, & Dill to suit your taste. Careful with the salt.

    Add just enough Mayonaise to fold into the potatoes. I find that making any salad with mayo tastes better when you use just enough to mix. You then can taste the flavors of all the ingredients and it is not over-powered by mayo. Mix and refrigerate for 2 hrs for enhanced flavor combining.
