A tweak on my mom's recipe. She used olives but I like capers. Either works. You can play with the amount of pickle and the types of relish. Sweet . Dill or a mix of both... I like to mix the relish a bit. Not a sweet potato salad but just a little kick . You can add a bit more sugar or honey if ya like it sweeter like an Amish type. Add more mustard if ya like it that way. Totally up to you to decide and love

Ingredients For potato salad

  • 6
    potatoes
  • 1
    onion chopped
  • 1/2 c
    mayonnaise
  • 1/4 c
    sour cream
  • 1 Tbsp
    yellow mustard
  • 3 - Tbsp
    pickle relish
  • 2 Tbsp
    capers
  • 2
    hard boiled eggs *optional
  • pinch
    pepper
  • 1/4 c
    vinegar
  • 2 tsp
    sugar
  • 1/2 tsp
    dill, dried

How To Make potato salad

    Boil potatoes whole for 15 minutes. You want them tender but not fully cooked through . Should be able to pierce with fork with some easy. Over cook it tends to end up more of a mash.

    While potatoes boil chop onion and place onion in a big bowl .. sprinkle sugar and dill over and pour vinegar on mix .. Set aside

    Once potatoes are cooked and cooled enough to handle. ( I pour off hot water and cover them with cold water. They tend to peel easier). Peel potato and cut into no smaller then 1 inch chunks. Place in bowl with onions

    Gently toss potatoes in vinegar mix ( this helps potato to not fall apart) and then add mayo. Sour cream. yellow mustard . Relish. Campers and fold in to mix

    Add chopped eggs and fold in

    Refrigerate to chill.
