After one bite, we can see why this is Beverly's go-to potato salad recipe. It's delicious! The creamy mustard mayo dressing with the soft potatoes is a great contrast to the crunchy bits of celery and pickles. Make sure to add this to your cookout menu this summer. So good!

Ingredients For mustard potato salad

  • 4-6 lg
    russet potatoes peeled, diced, and boiled
  • 6-8 lg
    hard-boiled eggs, diced
  • 1 c
    chopped dill pickles
  • 1 md
    onion, chopped
  • 1 c
    chopped celery
  • 2-3 Tbsp
    prepared mustard
  • 3/4-1 c
    mayonnaise
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper

How To Make mustard potato salad

  • Ingredients in a bowl.

    Put all ingredients in large bowl. Mix well.
  • All ingredients mixed together.

    Adjust seasoning as needed. May need more mustard, salt, pepper, or mayonnaise
  • Bowl covered in plastic wrap.

    Refrigerate until cold. Overnight is best for flavors to blend. Enjoy.
