Greek Potato Salad with Feta Cheese
1 1/2 lbpotatoes, quartered lengthwise & cut into bite size
1/2 cfresh lemon juice
1red bell pepper, roasted & diced
1/2 cpitted black olives
1 Tbspfeta cheese mashed with a fork
3/4 tspdried oregano
1/2 colive oil
·salt & pepper
How to Make Greek Potato Salad with Feta Cheese
- Peel & cut potatoes in large bite size pieces. Boil for about 10 minutes or just tender. Drain and transfer them to a large bowl.
- Toss the potatoes with 2 Tbsp of lemon juice and salt to taste. Let them cool and then add the red pepper, the olives and the scallions.
- In a jar pour in the remaining 2 Tbsp lemon juice, the oregano, the feta cheese and the olive oil. Shake well until dressing is emulsified.
- Pour the dressing over the salad, toss and season it with salt & pepper.
The potato salad keeps, covered and chilled, overnight.
Serve the potato salad at room temperature.
