Awesome macaroni salad and you don't have to be Amish to eat it. Makes a great side for your next BBQ! Cook time reflects 4 hours chill time.

Ingredients For sweet amish macaroni salad

  • 1 lb
    macaroni, dry
  • 4 lg
    eggs, hard boiled
  • 1 sm
    onion, diced
  • 3 stalk
    celery, diced
  • 1 md
    red bell pepper, diced
  • DRESSING
  • 1 c
    mayonnaise
  • 1 c
    sour cream
  • 1/3 c
    sugar
  • 1/8 c
    yellow mustard
  • 2 Tbsp
    dill pickle relish
  • 1 Tbsp
    apple cider vinegar
  • 1 tsp
    celery seed
  • 1/4 tsp
    salt, or to taste
  • paprika

How To Make sweet amish macaroni salad

    In boiling salted water cook macaroni to just done.

    Drain, rinse well under cold water, drain again and set aside.
  • 3
    In a large mixing bowl combine all the dressing ingredients whisking until smooth. Reserve 1/2 cup in a container with a lid-set in refrigerator.

    Add the cooked & drained macaroni, chopped vegetables and eggs to the dressing bowl. Fold gently so you don't "mash" the pasta.

    Once the salad is well combined, place in a glass bowl and cover.

    Chill for at least 4 hours or overnight.

    When ready to serve stir the salad well, checking to see if you need to add the reserved dressing.
