This recipe has to be delicious, just by the ingredients, it is delicious looking with delightful presentation too, so I adopted it here on Just a Pinch; trying it out today!

Ingredients

  • 1 lb
    orzo pasta
  • 3 Tbsp
    olive oil
  • 1/4 c
    olive oil
  • 2 c
    fresh spinach
  • 3/4 c
    feta cheese
  • 1 c
    mixed dried fruit
  • 1/4 c
    pine nuts
  • ·
    juice from 1 lemon
  • ·
    salt to taste
  • ·
    pepper to taste

How to Make Orzo Spinach Salad

Step-by-Step

  1. Cook orzo until tender.
  2. Drain pasta then toss with the 3 tablespoons olive oil.
  3. Spread on jelly roll pan and let sit until cool.
  4. Once it is cool place in a large bowl and mix with remaining ingredients. Enjoy.
