Ingredients

  • 1 c
    orzo pasta
  • 2 Tbsp
    sun dried tomatoes
  • 1/2 c
    sweet red pepper, copped
  • 1/4 c
    green onion, chopped
  • 1 can(s)
    sliced ripe olives, drained
  • 3 Tbsp
    chopped parsley
  • 1 tsp
    olive oil, extra virgin
  • 1/4 c
    red wine vinegar
  • 1/2 tsp
    dry mustard

How to Make Orzo Salad

Step-by-Step

  1. Cook the orzo according to the package directions, omitting any salt and fat; drain.
  2. Chop the tomatoes and soak them in boiling water for 10 minutes.
  3. Combine the orzo, tomatoes, red pepper and the next three ingredients in a bowl; toss gently.
  4. Combine the olive oil, vinegar and mustard; stir well with a wire whisk.
  5. Pour over the orzo mixture; toss gently.
  6. Cover and chill for at least two hours.
