my summer pasta salad

When the weather is too hot to cook, I like to put together this cool and delicious pasta salad. It goes great with everything~ hamburgers, hot dogs, sandwiches, etc. If you put cooked chicken in the salad, you will have a complete meal.

Ingredients For my summer pasta salad

  • 1 md
    cucumber
  • 1 md
    yellow squash
  • 1 md
    zucchini
  • 1
    red bell pepper
  • 1
    green bell pepper
  • 4 c
    fresh broccoli florets
  • 3 c
    fresh cauliflower florets
  • 1 sm
    red onion, finely chopped
  • 2 pkg
    italian salad dressing mix (good seasons)
  • 1
    16 oz box bow tie pasta (or your favorite pasta)
  • 1/4 c
    olive oil
  • 1/4 c
    red wine vinegar
  • 3/4 tsp
    salt
  • 1/2 tsp
    pepper

How To Make my summer pasta salad

    Wash the first 5 ingredients. Chop and transfer to a large bowl. Add the remaining vegetables. Sprinkle with dry salad dressing mix; toss to coat. Refrigerate, covered, at least 2 hours. (can be refrigerated overnight, if you want to prepare veggies ahead of time).

    Cook pasta according to package directions. Drain; rinse with cold water, drain again. Add to vegetable mixture. In a small bowl, whisk together the remaining ingredients. Add to the salad; toss to coat. Serve and enjoy.
